POTATO PIZZA WITH HERBS
Cooking time: 60 mins
Serves: 2 (= 1 pizza)
Ingredients, pizza base:
2 dl Water
15g dry Yeast (1/2 bag)
1 ts Sugar
1/2 ts Salt
4 dl Wheat flour
2 tbs Olive oil
Ingredients, filling:
2 medium size Potatoes (cooked)
Olive oil
Rosemary, fresh
Thyme, fresh
2 cups of Mozzarella cheese
2dl of grated Cheese (cheddar or other leftover cheese)
Garlic
Salt and pepper
Preparation:
Preheat oven into 250 degrees. Begin making the pizza base mixing by water, yeast, sugar, salt and half of the flour in a measuring a bowl. Stir and leave for 10 minutes to let the yeast to activate. Add the remaining flour and olive oil. Mix the dough in the cooker or by hand until the dough becomes stretchy. Raise the dough under the cloth for about 30 minutes. Bake the raised dough by hand on a floured surface. Roll the dough to the size of the baking tray. Cook in the oven for about 10 minutes.
Take the base from the oven and spread some little olive oil and a grated cheese over a pizza base. Cut the potatoes into thin slices and lay on the bottom. Spread some olive oil on potatoes and sprinkle salt, pepper and fresh herbs (rosemary and thyme) on top. Lay mozzarella slices on the surface. Bake in a 250 degree oven for about 10–15 minutes or until bubbling or golden brown. Enjoy!
